Oven Temperature Tips
- • Fan ovens run about 20°C hotter than conventional ovens at the same setting. If a recipe says 180°C, use 160°C on a fan oven.
- • Always preheat fully — at least 10–15 minutes before baking. An under-heated oven gives flat, dense cupcakes.
- • Use an oven thermometer if your bakes are inconsistent. Most domestic ovens are 10–20°C off the dial reading.
- • Open the door as little as possible. Each opening drops the temperature by around 20°C and risks sinking your sponge.
- • Position matters: bake cupcakes on the middle shelf for even heat. The top is hotter, the bottom often weaker.
- • Gas Mark conversions are approximate — gas ovens vary more than electric. Trust the smell and a skewer test over the dial.
